Who Stole the Cookies: Oatmeal date cookies

  • 1 ½ cups oat flour, gluten-free if needed*
  • ½ cups buckwheat flour
  • ¼ cup + 2 tablespoons oats, gluten-free if needed
  • ¼ cup date sugar
  • ¼ cup + 2 tablespoons crumbled dates
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ cup dark chocolate or carob chips (optional)
  • ¼ cup + 2 tablespoons melted coconut oil
  • ¼ cup + 2 tablespoons maple syrup
  • 1 teaspoon vanilla
  • *You can make your own oat flour by grinding oats in the food processor, pulsing until you get a flour like consistency. Make sure to measure after you grind the oats.
  1. Mix all dry ingredients together in a bowl.
  2. Add in wet ingredients and mix well. It might be helpful to use your hands.
  3. Take about a tablespoon and a half size pieces and form each cookie into a disc before placing it on a cookie sheet lined with parchment paper.
  4. Bake for 13-15 minutes.
  5. When the cookies come out of the oven, use a fork to press down on the cookies to help them bind together.
  6. Let cool completely before removing them from the pan.
