The Other Banana: Baked Plantain Chips

  • 1 large green plantain
  • 2 teaspoons coconut oil
  • Pinch of Himalayan pink sea salt
  1. Preheat oven to 350 degrees.
  2. Cut off ends of plantain. Score from top to bottom and peel back skin.
  3. Slice plantain on an angle, as thin as you can.
  4. Place sliced plantains in rows, no over lapping, on a baking sheet lined with parchment paper that has been coated with 1 teaspoon of coconut oil.
  5. Drizzle the additional teaspoon of coconut oil on top of the chips, and then sprinkle with sea salt.
  6. Bake for 25 minutes or until they are golden and crisp. Let cool and enjoy!
