I Heart Hummus: Roasted Garlic Hummus

  • 2 cans of organic garbanzo beans (chickpeas), no salt added, drained and rinsed
  • OR
  • 2 cups of dried garbanzo beans, soaked overnight, then boiled in fresh water for 45 min-1 hour
  • 2 tbs olive oil
  • 3 tbs tahini
  • 2 lemons, juiced
  • 1 head of roasted garlic, cloves removed once cooled
  • ¼ cup + 2 tbs water, add in ¼ cup, then add extra 2 tbs as needed
  • 1 tsp sea salt, more to taste
  • Garnish (optional):
  • Drizzle of olive oil
  • Sprinkle of paprika
  1. Roasted Garlic:
  2. Preheat oven to 400 degrees
  3. Cut of top of garlic and drizzle with olive oil
  4. wrap in tin foil or parchment paper
  5. Roast for 45 min to 1 hour
  6. Hummus:
  7. Once garlic is cool remove cloves.
  8. Add all ingredients to the food processor and process until smooth
  9. add more water to achieve desired texture
  10. Garnish with paprika and a drizzle of olive oil
