Waffles Gone Wild: Potato Waffle with Fried Egg and Smoked Salmon

  • For Waffle:
  • 1 organic large Yukon gold potato
  • ¼ tsp. sea salt
  • Coconut oil
  • Toppings:
  • 1-2 organic eggs
  • ¼ sliced avocado
  • 2 slices wild smoked salmon
  • sriracha (optional)
  1. Scrub potato well. Shred potato using a food processor, or can also be done by hand. The potato shreds should be medium thickness.
  2. Measure a heaping cup. If only using one potato can use the whole thing.
  3. Squeeze our excess liquid from the potato shreds using paper towels or cheesecloth.
  4. Wipe down the waffle iron with some coconut oil on a paper towel, or spray if you have unrefined coconut oil spray.
  5. Heat waffle iron to medium or medium high.
  6. Place potato evenly on waffle iron and press down hard to bind it together. Cook for 10-12 minutes pressing down every few minutes. When it’s finished it should be golden brown and the edges should be crispy.
  7. Top with a fried egg or two, some wild smoked salmon, avocado slices and sriracha.
  8. Enjoy!
