Chocolate is definitely a fan favorite. For those out there who know me well, your probably surprised about all my chocolate talk lately. The truth is, I don’t love chocolate. Yup, you heard me right. Crazy talk, I know. It goes back to a time when I was three years old and my mom (a little lenient with rules, but oh so loving) let me have an m&m machine in my room. You can guess what happened…I ate an abundance of m&m’s, and there was a not so pleasant aftermath. I pretty much have avoided all chocolate since then. It wasn’t until very recently that I tried and liked pure, raw chocolate. It’s a start!
This chocolate recipe is as pure and raw as it gets. It uses only three simple ingredients: raw cacao powder, coconut oil, and maple syrup. It is so simple and easy to make and can be used in so many ways.
Because of the coconut oil in this recipe, it hardens when it gets cold. You know those chocolate dips from the ice-cream truck? Well those dips harden when it coats the ice-cold ice cream, because it is made with coconut oil! Exciting, I know, but don’t go thinking those chocolate dips are good for you. They are filled with sugar and other processed things that try to pass for food. But here, you have a healthy version that is way tastier! Now, that is exciting.
You can also keep the chocolate in its liquid form and eat as a fondue, dipping in all different types of fruit. You can dip strawberries, and put them in the fridge to harden for amazing chocolate covered strawberries. You can pour the chocolate into molds, and put them in the freezer to harden for homemade chocolates. The possibilities are pretty endless.
In some of my past posts I talked about how good raw cacao is for you. Cacao is FULL of amazing antioxidants. Cacao contains magnesium, which will give you lots of energy, and sulfur, which is great for shiny hair and strong nails. Cocao is also very anti-inflammatory, can help regulate blood pressure, reduce cholesterol and help keep the immune system strong. All amazing things…this is why I now eat chocolate.
Coconut oil is also an amazing super food. It has antimicrobial, antioxidant, anti-fungal and antibacterial properties making it super good for your immune system.
As far as natural sweeteners go, 100% pure maple syrup is one of the few that I use. It has a lower glycemic index than sugar, meaning your blood sugar won’t spike as fast as it does with regular sugar, and it contains some minerals and antioxidants that are actually good for you and your immune system. It is still a sweetener, so it should be used sparingly, but as far as sweeteners go, maple syrup is an excellent choice.
So here you have it, pure, raw, amazing, and amazing for you chocolate. If I like it, I know you will too. Here’s to retraining my taste buds!
- ¼ cup raw cacao powder
- ¼ cup melted coconut oil
- 2 tbs. 100% pure maple syrup
- Pour all ingredients into a bowl and mix very well.
- Enjoy and lick the spoon!
